Spontaneous fermentation.
6 weeks of maceration
before the free run juice
aged in 228L barrels for 16
months. Unfined. Unfiltered.
Sediment expected.
No need to reinvent the
wheel here. Try classic
pinot dishes like
prosciutto-wrapped pork
tenderloin or anything
with mushrooms.
